Three Easy, Yummy Desserts for your Holiday Table

Last week, we chatted about Side Dish Recipes for your Holiday Table, and hopefully by now, you’ve forgiven me for talking about cooking instead of gardening for the past 2 weeks! Don’t worry, we’ll be going back to gardening soon!

I’ve got three easy but incredibly delicious dessert recipes for you that will help you make everyone (even cranky Aunt Bertha) happy this holiday!

So, I know you just want me to get to the recipes already, but I have to give you the quick backstory on this first one for sentimental reasons, so please bear with me for a paragraph or two.

When my dad was sick with cancer 12 years ago, knowing his cancer was terminal, he indulged in his favorite foods whenever he wanted and whenever he was feeling up to it. I received this recipe for Chocolate Crockpot Cake and knew he would LOVE it!

Why? Because he LOVED, ADORED and otherwise COULDN’T LIVE WITHOUT CHOCOLATE. The richer, the better!

When I first made it, he took one look at it and christened it “Poop Cake”.

Yes, I know, but you needed to have known my dad and his strange sense of humor. And honestly, it is a pudding-y type of cake and is a very rich, dark brown, so I suppose it does slightly resemble poop.

Don’t worry, it doesn’t taste like poop though!

So, now that you’ve either stopped reading in disgust or you’re totally intrigued, let’s get started.

Chocolate Crockpot (AKA Poop) Cake

Ingredients

  • 1 package chocolate cake mix (gluten-free works fine too! YAY for me!)
  • 1 package (4-serving size) cook & serve chocolate pudding (make sure it’s NOT instant!)
  • 1 cup chocolate chips
  • 1 cup sour cream
  • 1 cup water
  • 3/4 cup vegetable oil
  • 4 eggs

NOTE: If you use a gluten-free cake mix, you may want to use the larger box of cook & serve pudding (I think it’s 6 servings). Gluten-free flours seem to soak up more liquid, and using more pudding will preserve the “pudding-y” texture of the cake.

Directions for Preparation

This is another one of those super complicated recipes….NOT!

Put all the ingredients in the crockpot and stir until combined. Cook on low for 3-4 hours.

Again, if you don’t happen to have a crockpot, this is a good basic model.

NOTE: I do recommend whisking the eggs before adding them. It’s also a good idea to add the pudding mix last as it will start to “set” and it will be hard to mix in if you add it sooner.

Serve with whipped cream or ice cream.

Trust me, you’ll be the star of the show when you make this for your holiday table!

Recipe 2: Stained Glass Windows

This is a recipe my mom has made for years, and it’s always a hit because it’s just so pretty! As a bonus, it’s naturally gluten-free for those of us who need it!

Ingredients

  • 1/4 lb (1 stick) butter
  • 1 package (12 oz) chocolate chips
  • 1 package (6 cups) miniature colored marshmallows
  • Coconut or chopped nuts (optional)

NOTE: I had some trouble finding the miniature colored marshmallows at my local grocery store. Target and Walmart carry them, though, as does Amazon pantry.

Directions for Preparation

Melt the butter and chocolate chips (microwave is fine, but watch carefully so they don’t burn). Alternatively, you can use a double boiler.

Cool this mixture enough so that the marshmallows won’t melt when mixed in (slightly warm to the touch seems to be about right). Stir marshmallows gently in to chocolate mixture.

Line a loaf pan with aluminum foil or parchment paper and spoon mixture into pan.

Sprinkle with coconut or nuts if desired.

Cool in refrigerator for at least 12 hours. Lift mixture out of pan using either aluminum foil or parchment paper edges.

Slice into 1/2 inch “windows” and place on a pretty plate.

These are as beautiful as they are delicious, and they’re so easy!

Recipe 3: Kentucky Butter Cake

If you’re a health-conscious individual, I know the above 2 recipes might offend your sensibilities a bit, and I’m pretty sure you’ll want to stop reading before you even get to the next one. BUT, if you happen to think once or twice a year it’s okay to indulge, keep on reading!

This one is definitely a bit more complicated than the two above, but SOOOOO worth it!

Ingredients for the Cake

  • 3 cups flour (I haven’t tried it yet with GF flour so can’t speak to how well it would work)
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 1 cup buttermilk or sour milk
  • 2 tsp vanilla

Directions for Cake Preparation

  1. Preheat over to 325F.
  2. Sift together the flour, baking powder, salt and baking soda.
  3. Cream the butter and gradually add the sugar, mixing well.
  4. Blend the eggs into the butter/sugar mixture one at a time, beating well after each addition.
  5. Combine the buttermilk/sour milk and vanilla.
  6. Add buttermilk mixture alternately with the dry mixture to the creamed mixture, starting and ending with the dry mixture.
  7. Mix well after each addition (this can be done by hand, as we do it, or with a mixer).
  8. Turn fully mixed cake batter into a greased 10-inch tube pan. NOTE: Be sure to use a 1-piece pan, batter is too thin for a 2-piece pan.
  9. Bake at 325F for 60-65 minutes until cake springs back when touched in center.
  10. Run spatula around edges and center stem of pan.
  11. Prick cake with fork in multiple spots and pour hot butter sauce (directions below) over cake.
  12. Cool completely before removing from pan.

Butter Sauce

Ingredients

  • 1 cup sugar
  • 1/4 cup water
  • 1/2 cup butter
  • 1 Tbsp vanilla

Directions for Preparation

Combine sugar, water and butter in saucepan and heat until butter is melted. DO NOT BOIL!

Stir in vanilla. Pour over cake as directed above.

Your guests will LOVE you for this one! Yes, it’s a little more work, but the flavor is beyond belief!

So. I was intrigued at CROCKPOT cake. But then you add in the poop and there ya go! Who could resist? (even those of us dieting…)

Love the stained glass recipe. I’ve never made it but have seen it and eaten it before!

Well YUM.. Those crockpots come in so handy. I have made bread pudding in mine and it came out so good and moist.
